He holds three Michelin stars, two of them as manager and head chef of the \u201c<a href=\"https:\/\/echaurren.com\/en\/restaurante-el-portal-cocina-creativa\/\">El Portal Echaurren<\/a>\u201d restaurant, at <a href=\"https:\/\/echaurren.com\/en\/hotel-echaurren-relais-chateaux\/\">the Hotel Echaurren Relais &amp; Chateau<\/a>, and the third as gastronomic advisor of the restaurant of the <a href=\"https:\/\/www.marquesderiscal.com\/indexeng.php\">Marqu\u00e9s de Riscal hotel.<\/a><\/h4>\n\n\n\n<p>Francis Paniego belongs to the fifth generation dedicated to the family business, the Echaurren Group (Hotel Echaurren Relais &amp; Chateau and the restaurants Echaurren Tradici\u00f3n, El Portal de Echaurren, El Cuartito, Tapas Bar and A Casa). Proud of family values, he claims to have received his first influences and his DNA as a cook down from the hand of his mother, Marisa S\u00e1nchez, an excellent and renowned traditional cook, who received in 1987 the National Gastronomy Award for Best Chef, awarded by the Royal Academy of Gastronomy. <\/p>\n\n\n\n<div class=\"youtube-responsive-container\"><iframe src=\"https:\/\/www.youtube.com\/embed\/eVTHd99nNBs\" allow=\"accelerometer; autoplay; encrypted-media; gyroscope; picture-in-picture\" allowfullscreen=\"\" frameborder=\"0\"><\/iframe><\/div>\n\n\n\n<p>Trained in\nthe best restaurants in Spain, he has always maintained a close relationship\nwith traditional cuisine and with the products of La Rioja, his homeland. It is\nthis love of tradition that has guided his latest work, aimed at reinvigorating\nand updating the deepest tradition of the region. Paniego is gastronomic\nadvisor to the Hotel Marqu\u00e9s de Riscal in Elciego (\u00c1lava) and, since this\nautumn, also to the <a href=\"https:\/\/www.hermitagehotel.sporthotelsandorra.co.uk\/\">Sport Hotel Hermitage in Andorra<\/a>.<\/p>\n\n\n\n<p>Since 2019 he has directed an innovative proposal: the ephemeral restaurant Ezcaray by Francis Paniego at the Hotel Mar\u00eda Cristina in San Sebasti\u00e1n \u2013city where he carried out part of his training with the chefs Pedro Subijana and Juan Mari Arzak\u2013, open only from July to October.<\/p>\n\n\n\n<p>In 2012,\nthe Spanish Academy of Gastronomy awarded him the \u201cNational Gastronomy Award\nfor the Best Chef in Spain 2011\u201d, and he received the 2015 Chef de L\u2019Avenir\nAward from the International Academy of Gastronomy.<\/p>\n\n\n\n<p>Next Thursday, April 30<sup>th<\/sup>, <a href=\"https:\/\/www.linkedin.com\/in\/rogeliopozo\/\">Rogelio Pozo,<\/a> PhD in Sciences, CEO of AZTI, expert in food technology and member of the board of directors of companies and foundations such as ELIKA, the Basque Food Safety Foundation will be with us.
